Lake colours might spark ideas of deep blues and algae greens – but in actual fact, it’s got nothing to do with the actual hues! Lake pigments produce colour through dispersion – and unlike water-soluble colours, they do not dissolve in water which makes them more stable. This type of colour solution is perfect for colouring products that contain fats, oils and sugars, or food items that do not contain the right amount of moisture for a water-soluble colourant to dissolve in. What’s more, unlike natural colours, lake pigments can be dispersed in other carriers such as propylene glycol, glycerin and sucrose – just amazing! Food For Thought
Humans tend to associate specific colours with specific flavours, which is why we need to add colour. For instance, glacé cherries aren’t naturally red! If we don’t add colour, they would actually be a very unappetising beige colour.
